Torimen believes that a remarkable bowl of ramen should start from the most primitive ingredient – water. Regular water can easily eliminate the genuine taste of fresh ingredients, therefore Torimen carefully picks PH 8.6 water to make its tonkotsu and infused ebi essence in order to secure genuine taste of all ingredients, making every sip and bite unforgettable.

Tonkotsu: Torimen exclusively selects different parts of pork bone added with dried sakura shrimp from Kyushu islands, bringing both ingredients to a high boil for 10 hours and obtain the intense and aromatic tonkotsu soup base.

Infused ebi essense: Torimen uses only medium sized ebi for its balanced sweetness. To get intense ebi perfume, Torimen first slowly roasts ebi head, then adds ebi shell, ebi oil, ebi powder along with Torimen's own creation – ebi miso, simmer in low heat for 8 hours to get distinct ebi aroma and taste in every bite.

Ebi miso takes 1 week of fermentation process with magic combination of seven different kinds of miso along with Japanese edo ebi paste, this unique blend gives a distinct layer to Torimen's ramen.
The traditional Japanese charcoal grill can add unique char-grill taste to your palate with the maximum heat of 400*C, however, it is hard to control the heat and food can be overcooked easily. Torimen specifically picks the premium high temperature grill that can maintain the heat at 200*C, this can secure all original flavor and sweetness of our fresh ingredients, making our yakitori nicely grilled on the outside and perfectly tender and juicy on the inside. Torimen strives to maintain this specific quality in order to make each bite counts.

Torimen insists on 'no marination" to preserve the original taste of fresh ingredients. Our special crew picks premium and the freshest ingredients from around the world - meat and seafood are flown in weekly and vegetables daily.
